"Eating a plant-based diet--one that embraces veggies and ditches the meat, eggs, and dairy--is one of the easiest ways to improve your health." What a wonderful find this book is! Full of full page colorful pictures of the made recipe items. I got hungry just looking at the pictures. Looking at the recipes I couldn't believe how easy these recipes are to make. I liked that at the top of each recipe it tells you soy free,grain free etc. for those with dietary restrictions. The nice thing is all the recipes are gluten free as well.
Healthy eating is nothing new to me. When I was growing up my mother was and still is a vegan but I got away from eating this way raising my family. Now that I have more time to focus on myself again I am so glad I eat a mostly plant based diet, no red meat for me at all!
Another nice thing about the book is the foods are easily prepared ahead of time and separated into containers for on the go meals, nice for the weekends when cooking time may be limited. This will be a much used recipe book for me as I am excited to try so many delicious things in it from entrees to breakfast to sides and desserts. Highly recommended!
